Despite it's name, wild bittercress is only mildly bitter and has a pleasant spicy taste when added to foods. Bittercress is an often overlooked wild herb, but the herby flavor can add some tasteful spice to any type of food.

Bittercress, Hairy Bittercress and Wintercress are all common "cresses", growing in poor to rich soils up to 30cm high. They spread very easily be seed. There are two main species of Bittercress found in gardens, the hairy bittercress C. hirsuta, and wavy bittercress C. flexuosa. Bittercress may flower all year round during mild winters. The leaves, stalks and flowers can be eaten, raw or cooked. They can be used as a hot tea to obtain the nutrients or use as a garnish or spice in soups, salads, marinades and more!
