 Native to Europe, Chicory is considered an invasive weed in North America with most commercial crops coming from farms in India. Chicory is a perennial growing up to four feet tall producing small, one inch, purple flowers. It can be seen blooming July through September and is commonly found along roadsides and waste areas.

As a coffee substitute organic Chicory Root is caffeine free and will make a very strong tasting brew. Our favorite way to use Chicory is half coffee and half Chicory, less if it is still a bit strong.

The active compounds in chicory are inulin, sesquiterpene lactones, vitamins, minerals, fat, mannitol and latex. Some of these compounds are considered anti-inflammatory, anti-fungal and contain numerous antioxidants.
