Herbal and culinary uses - 

Unprocessed Yellow Mustard is more white than Yellow. The Yellow color is usually made by adding Turmeric to the Mustard Seed Powder.

Many condiments are considered unhealthy, although Unprocessed/organic Mustard,  is certainly the exception. Mustard seed is an excellent source of essential B-complex vitamins such as folates, niacin, thiamin, riboflavin, pyridoxine (vitaminB-6), and pantothenic acid. Mustard seed also contains high amounts of flavonoid and carotenoid antioxidants as well as being Rich in Vitamin E, Niacin and minerals such as Calcium, manganese, copper, iron,  selenium and zin. Smaller amounts of Vitamins A, C and K  are found in the seeds as well.
